Combining the very best of traditional design and modern technology, this Laguiole knife has the traditional slender shape and smooth blade locking mechanism. The hand forged blades are made from Swedish 12C27 stainless steel which has been developed for its outstanding edge holding properties. This gives an exceptionally sharp blade that is tough and will not blunt easily. The spring lock and catch are forged in a single piece unlike lower quality knives that have the catch welded on to the spring. The catch is in the shape of a bee, a traditional imperial symbol that dates back to Napoleonic times. The blade, spring, catch and bolsters all have a smooth matt finish. The cheeks of the handle are made from native juniper burl, an attractive curly grained wood. Inlaid into the handle is a shepherd's cross, a symbol that hints at the history of this style of knife. When the shepherds were moving their livestock great distances from the hills to the plains or back again, they were unable to attend church to pray. The inlay on the handle gave them a cross on which they could focus on and pray to. This is a beautiful, heirloom quality knife that is also a wonderful tool to use.
