The equivalent to a chef’s knife in western knife terminology, this 135mm gyuto features a straight cutting edge and is used for preparing raw meat and fish. Its shorter length makes it easy to manoeuvre for fiddly cutting tasks. ©

Balance, performance and durability make these knives a favourite among professional chefs around the world. When you hold and use these knives, there attraction becomes apparent. The ultra sharp blades glide effortlessly through anything you are cutting from the toughest swede to the ripest tomato and produces smooth, cleanly cut slices and dices without tearing or squashing. The cutting edge of the blades are made from SG-2 stainless steel, one of the hardest Japanese stainless steels used for knives. With its hardness of Rc-63, these blades will not dull easily and will require sharpening much less frequently than European manufactured knives of which even the very best are made from softer steels. Wrapped around this hard, stainless steel core is a further 64 layers of slightly softer stainless steel which gives added weight and support to the blade. The layers are forge welded together and the blades crafted in the very best tradition of the Samurai sword makers and the blades display the characteristic suminagashi patterning. As these patterns are the result of hand working, no two blades will have the same pattern; each knife is unique. The blade and tang are forged as a single piece and the runs the entire length of the handle to make each knife solid and very strong. A silver nickel bolster adds extra weight giving each one perfect balance for the very best cutting results. The handle cheeks are made from linen Micarta, a high pressure laminate made up from layers of resin impregnated linen. Micarta is extremely durable and water resistant, withstanding the repeated use and wash cycles that would see wooden handles deteriorate with time. The handle cheeks are fixed onto the tang with two rose mosaic brass pins. These are truly stunning knives in both form and function. Rust Proof. Made in Japan.
