This soba knife is traditionally used for cutting noodle dough as the long, straight blade ensures, long straight noodles. The shape and thickness of the blade also makes it useful for cutting meat and finely chopping herbs. The fine, sharp blade is forged from a single piece of high carbon steel and is bevelled on both sides for right or left handed use. Produced by a highly skilled master blacksmith, the blade is hand forged and hand finished. The contoured rosewood handle is held in place with two brass rivets. Used with a forward slicing motion, this thick blade is easy to control and gives long straight cuts. Made in Japan. ©
