With its white paper steel cutting edge, this soba knife has an ultra fine, exceptionally sharp blade. Getting its name from the soba noodles this knife was designed to cut, this knife is compact in form, but has a long, straight 240mm cutting edge and is used with a forward slicing motion. As well as cutting noodles, this knife will also cut meat and vegetables and is very good at finely chopping herbs. The ultra sharp cutting edge and double bevel allows the blade to simply glide through whatever you ask it to cut. As mentioned before, the blade consists of a white paper steel core with a layer of stainless steel forged onto either side. This gives support to the incredibly hard white paper steel, protecting it from bangs and knocks that may cause damage to the steel. The oval section handle is made from native Japanese magnolia wood and has a soft smooth finish making it wonderfully comfortable to hold. A steel ferrule supports the blade and handle assembly.
