This is a very impressive looking knife and when you realise what it is designed for, it becomes even more so. This very large, curved blade is ultra sharp and its main purpose is for the cutting of sushi rolls in to portions without squashing or deforming the roll in any way. The combination of blade weight and the sharp cutting edge allows the blade to cut under its own weight with no force required. The pronounced curve lets the knife cut in a long smooth rocking motion from heel to tip and from tip to heel making it extremely efficient at repetitive cutting tasks. Hand forged by a master black smith, the blade consists of a blue paper steel core, a high carbon steel that is hard and tough and will take a razor like edge. Forge welded on either side of this core is a layer of softer, even tougher steel that protects the core from damage should the knife be dropped or impacted in any way. The handle is made from Japanese magnolia wood; a soft, warm wood which feels pleasant to hold. A polished buffalo horn ferrule supports the tang in the handle and gives added decoration to the knife. With uses way beyond cutting sushi rolls, this knife can be used in a similar style to a mezza luna to chop herbs or can be used very effectively in the preparation or meat, fish, fruit and vegetables.
