Translating as pointed knife, the deba can be used in the cleaning and preparing of raw fish as well as for chopping and mincing raw meat and fish. The blade is thicker than on the other types of knife and this allows the back of the knife to be used for chopping and breaking thin bones. Ideal for heavier cutting tasks, this is a single bevelled blade and is bevelled on the right hand side for right handed use. ©

These stunning traditional style Japanese kitchen knives are the product of true master craftsmen. The blades are hand forged by a master blacksmith who has spent years learning his trade. It is worth remembering that each blacksmith spends between 15-20 years learning the skills and processes needed to produce fine blades. The blades on these knives have a core, which forms the cutting edge, of blue paper steel. This is a high carbon steel that is extremely hard and will hone to a razor like edge. Multiple layers of a softer steel are forge welded over this core to give it protection and support. The forging and grinding processes expose the layers of the steel giving the blades the beautiful suminagashi or Damascus steel patterns. Each blade is signed by the master blacksmith who created it. On these knives are the traditional round magnolia wood handles. What makes these so outstanding is that the handles are decorated with urushi varnish. This is a naturally occurring lacquer that comes from the sap of the Japanese varnish tree. This lacquer is notable for its resistance to heat, water, alcohol, solvents, acids and alkali and is also food safe. The techniques required to use urushi varnish successfully are learnt over many years and the people who practise the art form professionally are considered master artisans. The handles on these knives have a deep, black urushi lacquer finish with a red floral design and gold banding and are completed with polished buffalo horn ferrules. These knives are not only a joy to use but are so beautiful that they will be a major talking point in any kitchen. Each knife comes presented in a kiriwood box. Not rust proof. Made in Japan.
