The santoku all purpose knife will cut, chop and slice raw and cooked fish meat and vegetables. Rust proof. At first glance, these look like any other kitchen knives made in Europe. Hold one in your hand and you know these are something much more special. Lighter, sharper, stronger and much more durable, these kitchen knives are well suited to the serious chef who takes delight in all aspects of cooking.

These knives are made by a third generation master blacksmith whose family has been making very fine blades and cutting tools for over 70 years. The blades are hand forged and made up of multiple layers of stainless steel. The core of the blade is made from VG10 stainless steel, a steel ideally suited to blades and cutting edges as it is very hard, has a fine structure and will take a razor sharp edge.

Forge welded on either side of this core are 16 layers of a tougher, slightly softer stainless steel that strengthens the blade and protects the very hard steel core from damage. These layers produce the stunning suminagashi patterns on the blade and as the blades are hand made, each blade has its own unique pattern. The tang is forged as an integral part of the blade making these knifes extremely sturdy.

The handles are made from laminated hardwood and have a simple, smooth black finish. Steel pins hold the blades and handles together and the stainless steel bolsters give weight and balance to these professional quality kitchen knives. An excellent selection of knives that will delight even the most discerning of cooks. Combining the high performance of the Japanese layered blades with the more familiar handle shapes of the west, these Western style kitchen knives will compliment any kitchen.

The blades are forged from multiple layers of steel and feature the characteristic suminagashi pattern on the blades. Due to the laminated construction of the blades, they are noticably thinner than their European counterparts that are made from much softer steel and require the extra thickness for support. Japanese kitchen knives are some of the finest knives you can buy.

The cutting edges are made from much harder steel than European kitchen knives allowing them to take a finer, sharper edge. A sharp knife is far safer to use than a dull one as it does not require any force from the user when cutting; it should cut under its own weight alone. These knives, both western and traditional Japanese styles, are all made from the finest steels and feature solid or laminated wooden handles.
