Shirogami Hocho - Set of 3 Knives

This set of three Japanese kitchen knives comprises a general purpose Santoku, an Usuba for preparing and chopping fruit and vegetables and a gyuto for filleting, slicing and preparing raw meat and fish. These traditional Japanese kitchen knives share many features with the more expensive ranges of kitchen knife and although they are lower in price, they are no less amazing in their performance.

Shirogami means white paper steel; a pure carbon steel that is exceptionally hard and fine and takes a razor like edge. It is this steel that is at the very heart of these knives and forms their cutting edges giving them the ability to slice and chop through very tough vegetables or over ripe fruit and even raw meat and fish, effortlessly leaving a clean, smooth cut.

Softer iron is forge welded on to either side of the white paper steel to give the blade greater strength. In keeping with the traditional style of these knives, the rounded handles are made from magnolia wood and feature a black plastic ferrule. These are excellent knives and make the marvellous cutting power of Japanese kitchen knives available to all.

    I had been looking at a variety of Japanese Knives, pondering the benefits of carbon steel over stainless steel, I stumbled across this set of three Shirogami knives and decided to take the plunge. I ordered from Rutland at around three thirty pm and received an email advising the knives had been despatched at five o'clock. The items arrived by Royal Mail two days later. Exceptional service. Out of the box they are not quite razor sharp, and in fairness I didn't expect them to be, the truth is they are very low cost for white paper carbon steel, the outer cladding is very rustic, and as the photos indicate they are no show ponies. Fit and finish is as I expected at the price point, i.e. not brilliant. I gave the raw Magnolia handles a quick wax treatment before use to protect from any dirt or splashes, and gave them a pass on the 8000 grit whetstone, then stropped them to a polished finish. Takes the hairs off my arm a treat. Not being a pro chef they are not going to take a hammering on a daily basis, but so far the edges are still excellent. As others have said carbon steel isn't for everyone, they take effort to maintain but perversely, for me,that is also part of the allure. For the price, and as an introduction to carbon steel, I wholeheartedly endorse these knives.

    I bought these knives as a 'learner set' to get used to the style of Japanese kitchenware, but I am very impressed with their sharpness and general feel. Perfect next day delivery just iced the cake! Highly recommended

    I am very impressed with these knives. They arrived very sharp and perform excellently. Performance, 5/5 I have a lot of experience sharpening stainless steel knives so I have a feel for the different steels used in knife making. The white paper steel at the core of these knives is much harder than stainless steel, and the edge that it takes is extremely good. I can slowly cut a paper thin slice off the top of a tomato without holding the tomato. I don't know the exact hardness of the knives, it probably isn't perfectly consistent for every knife, however I am certain that mine are all above a rockwell hardness of 60. When chopping onions, the patina can discolour some of the onions. I haven't noticed this affecting the flavour of the onions, but it is something to bear in mind. Looks, 4/5 These knives are made in japan by hand, each one has a slightly different surface patina caused by the high carbon steel and slight imperfections during production - this imbues each knife with a unique character and, I think, a rustic beauty that is a pleasure to behold. Cost, 5/5 For me these knives are a compromise - they need a bit of effort to maintain to keep dry and rust free - however, it is difficult to beat the edge that they take and I'd have to spend a lot more to get three maintenance-free knives that perform so well. For me the extra cost of extremely high-performance Japanese- or European-style knives just isn't worth it. Overall, 5/5 If you're prepared to put in the small amount of effort to keep these knives in working order (all knives need some effort) then I would definitely recommend them at the price. They make food preparation pleasurable and cooking is something I definitely look forward to.

    These are not the greatest Japanese kitchen knives but they are possibly the greatest VfM if you are on a budget. They can also be sharpened to cut as well as any. They are now my first go-to set, so that I can save my more attractive knives to ogle at, rather than use. Highly recommended if you funds re not unlimited.

    These are truly exceptional knives. You can clearly see that they are individually hand forged and hand finished. I love cooking fish, mainly halibut and these knives allow me to skin the fillets without tearing or ripping. I purchased a set of so called Japanese kitchen knives from a well known and well respected high street department store, only to find that they were of Japanese design and not manufactured in Japan. These Shirogami knives are in a class of their own and I would recommend them to any discerning cook.

    Ooh boy are these knives sharp. The first time I used them I sliced a mushroom into 1 mm sections. They really make cooking more enjoyable as you can prepare your ingredients with great accuracy. My speciality is stir fry on a Tuesday night and I now look semi professional - or so I think. One of those purchases that you will never regret.

    I recently went on a Japanese Cooking weekend and fell in love with the fantastic knives that the professional chef was using. Unfortunately, my budget will not quite stretch to the ones he had, but then I saw this set on Rutlands. A set of 3 knives for less than 100, absolute bargain. I snapped these up straightaway and do not regret a thing. They do take more looking after than your standard knife but it is well worth the effort. Very happy indeed
