Product Details

With its straight stainless steel blade, this knife will cut and chop all fruit and vegetables even ripe tomatoes. With red sandalwood handle. Western in their overall styling, this selection of three kitchen knives offer the very best blend of Japanese technology with straightforward practicality. The blades are hand forged by a fourth generation master blacksmith who learnt his trade whilst apprenticed to a master knifemaker in Takefu.

Takefu is an important town in Japan's knife making history, the craft has been practised there for well over 700 years and the name Takefu is synonymous with premium quality knives and blades. These blades are made from layers of stainless steel. The core layer, which forms the cutting edge is made from VG10 stainless steel, a steel that is hard, will take an exceptionally sharp edge and will not dull easily. Around this core, 16 further layers of a softer stainless steel are forge welded on either side making 33 layers in total. These layers add strength to the blade and protect the hard steel core from knocks and impacts that may damage it. This laminated construction allows the blade to be much thinner than the european made knife blades making them lighter and much sharper. The blade and tang are forged as a single piece giving the knife an inner strength and durability.

The western style sandalwood handles are contoured to give a secure grip in use and stainless steel pins anchor the blades in the handles. Each blade bears the signature of the master blacksmith who made it. These are excellent value for money and are an ideal introduction to anyone who wants to experience the benefits that Japanese knives can bring to their kitchen. Combining the high performance of the Japanese layered blades with the more familiar handle shapes of the west, these Western style kitchen knives will compliment any kitchen.
