Product Details

This knife has a longer thinner blade than the all purpose knife making it the perfect shape for preparing and filleting raw meat and fish. Offering the three most used knives in Japanese cuisine, this range of Western style kitchen knives is the ideal way to bring the high performance of Japanese blades into your everyday cooking. The hand forged blades are made up of 33 layers of stainless steel making them stronger, thinner and lighter than their western counterparts. Western made kitchen knives have blades that are a softer steel than Japanese ones and therefore have to be thicker and heavier to achieve a similar strength. The central layer that forms the cutting edge is made from VG10 stainless steel, a very hard, durable steel that will hone to a razor like edge. Wrapped around this is a further 32 layers of a slightly softer, tougher steel which gives support and protects the hard steel core. The blades are forged in a single piece with their tangs making these knives much stronger than cheaper versions that have tangs welded on to them. The handles are made from laminated, exotic hardwood and are contoured to fit comfortably in the palm of the hand. These handles are treated to resist water for extra durability preventing them from degrading over time as many wooden handles do. Two stainless steel pins hold the tang secure in the handle and a stainless steel bolster adds weight to the knives giving them perfect balance in the hand. Each blade is engraved with the signature of the Japanese master blacksmith who created them. These are beautiful kitchen knives that quite simply make chopping and slicing a pleasure not a chore. Combining the high performance of the Japanese layered blades with the more familiar handle shapes of the west, these Western style kitchen knives will compliment any kitchen. The blades are forged from multiple layers of steel and feature the characteristic suminagashi pattern on the blades.
