This knife is designed to cut and portion sushi rolls without squashing or causing deformation to the roll. Looking at the blade it is easy to see why it works so effectively. The blade tapers gradually from the ultra fine, sharp cutting edge all the way up to the top of the blade. Its curved blade allows it to cut in a long, smooth rocking motion moving from tip to heel and back again giving clean, precise cuts. Do not think that sushi is all this knife is good for. It may be used like a mezza luna for the fine chopping of herbs and can also be used for chopping meat fish and vegetables. The blade is hand forged by a master blacksmith from three layers of stainless steel making it a hardy choice for any kitchen. The core of the blade is made from VG10 stainless steel, a premium quality stainless steel that is hard with a fine structure. This fine structure allows the knife to take a very fine, and ultimately very sharp, cutting edge. This core is flanked by a single layer of slightly softer, tougher stainless steel on either side which acts like a shock absorber protecting the core from damage due to knocks and other impacts. The blade is forged with an integral tang and the sits deeply in the Japanese magnolia wood handle. The handle has an oval cross section making it comfortable to grip and is finished with a polished buffalo horn ferrule. This knife will compliment the collection of any cook or chef who appreciates fine knives. Blade length 240mm. Made in Japan. These hand made knives are at the very heart of any Japanese kitchen.
