Looking like a mini version of the santoku general purpose knife, the kobocho is equivalent to a paring knife and will peel, de-seed, clean and perform small intricate cutting tasks. It is easy to manoeuvre and handle making it a joy to use. Developed for the Japanese professional chef, this range of kitchen knives combine premium quality materials, traditional design and the very best in craftsmanship. These knives are quite beautiful in both their form and function and are a joy to use. The hand forged blades have a stunning Damascus steel patterning to them. Unlike other blades, this effect is achieved by building up alternate layers of nickel and stainless steel. This gives the striking mixture of matt and polished areas on the blade. Each side of the blade has 36 layers and the combination of nickel and stainless steel makes the knife strong and also resistant to corrosion. In the middle of the blade, a single core layer of SKD11 alloy steel is used and this forms the cutting edge. Originally developed for industrial cutting tools, this steel was found to be a perfect choice for professional kitchen knives due to is hardness and its durability. The extremely fine grain structure of the steel allows it to take a razor sharp edge. This translates into a knife that is extremely sharp and will not blunt easily even in the punishing environment of a professional kitchen. The knife handles are octagonal in cross section giving a firm grip but also allowing the knives to be held in different ways according to how they are being used. This handle shape makes these knives exceptionally comfortable to hold even for long periods of preparation. These handles are made from red sandalwood and feature buffalo horn ferrules to anchor the blade and give perfect balance to the knives.
